A speed control sets how fast the machine may sew. It does not necessarily replace the foot controller. Choose a model that explicitly documents a start/stop button as well as the pace control you need.
Brother's support instructions for the CS7000X, CP100X and CE1155 say the start/stop button cannot be used while the foot controller is connected. Disconnecting it is part of the intended setup, not evidence that the button is faulty. For CS7000X, this no-pedal recommendation covers ordinary machine-fed sewing. Its separate free-motion quilting-foot instructions call for the controller, which disables start/stop while connected.
The MOD-30 lets you position the needle electronically. That can help prepare a turn, but a needle-position button does not itself prove the machine supports sewing without a pedal. Check each control against the exact model.
The MOD-30's extension table and even-feed foot are optional. The CS7000X and C7250 include table support and walking feet.
