Of these three bread makers, choose Breville Custom Loaf BBM800XL when you need four to nine saved schedules and your recipes fit its program and ingredient limits. With three schedules or fewer, consider Zojirushi BB-SSC10 for routine one-pound baking, or BB-PDC20 for a two-pound rectangular loaf. Check that the Homemade timing ranges suit your recipes before choosing either Zojirushi.
Start with the loaf you bake routinely, then check the stages and timing your recipe needs. Extra memory is useful only if you have more schedules to save.
01
For routine one-pound baking
BB-SSC10 is designed around a one-pound loaf. Breville also supports that size on compatible programs, but its manual warns that a small batch may not fill the pan enough for a uniform loaf, especially with whole grains or special ingredients. When three saved schedules cover your baking, that pan-size caveat is a reason to consider the smaller Zojirushi.
02
For a two-pound rectangular loaf
BB-PDC20 is the alternative for a traditional rectangular loaf at its documented two-pound capacity. Choose it when that is the loaf format you want and three saved schedules cover your recipes. Use a recipe written for the machine rather than assuming you can scale any one-pound batch to fit.
03
Make sure the controls can reproduce your recipe
Both Zojirushi models let you set knead, rise and bake times in Homemade mode. Breville can change only phases present in the selected base program. Bake Only cannot acquire a knead phase. Its manual points to Whole Wheat when you need access to every phase. Before buying for a long rise or another unusual schedule, compare your required stages and durations with the exact manual.
04
When another regular recipe fills the memory
A fourth regularly used schedule is the practical dividing line. On either three-memory Zojirushi, you must replace an existing saved cycle or re-enter a schedule when needed. Breville can retain four to nine schedules together. If you repeat only one or two, the extra memory may add little to your routine.
Check these before buying
Match your usual recipe size and desired loaf shape to the machine before choosing by memory count.
Check the exact US model and the included pan and paddles in the selected offer.
Read the allowed phase ranges before buying for an unusually long fermentation schedule.
A saved cycle does not remove Delay Start restrictions. Breville says not to use its timer with perishable ingredients such as fresh milk or eggs.
Keep a separate recipe log if you need more than nine independently saved schedules. None of these three stores more than nine.
What this comparison cannot tell you
The source comparison covers these three models, not all seventeen bread makers in the catalog. An unchecked memory count does not make another model unsuitable.
Manufacturer specifications establish the saved-cycle and loaf-size differences. They do not establish a taste, texture or reliability winner.
